This week’s delights in Italian Cooking and Conversation were capesante, pancetta e funghi bruschetta (scallop, pancetta, and mushroom bruschetta), risotto al basilico (risotto with basil pesto) and cotton cheesecake. The risotto with basil pesto is a light and refined dish that is super easy to make. If you love basil, this is it! The cheesecake was amazingly tasty!
